Low Calorie Kale & Chicken Salad With Pico De Gallo

This is the best salad I’ve eaten on my weight loss journey!

If you like tomatoes, onion, green pepper and cilantro, you’ll love this too!


This salad has fresh Kale, which is better, ginger, lettuce, grilled chicken, low calorie dressing and Pico De Gallo. I eat a salad for dinner every night and I was cutting up onion, tomatoes, and kale all the time. Then one day I said “Duh” why not just use the Pico De Gallo? Now I put a bunch of that in and I love it. I use Lite Caesar dressing. That’s just the kind I like. (Not the creamy).


I’m still working on losing weight. I try to eat less calories and I do certain exercises. The ones for the stomach are really working. My stomach looks all different and better. But I haven’t lost as much as I want to yet. I’m trying to get it off before we go to the beach in August.


You can make the Pico De Gallo or just buy it. I found mine at Wal-Mart. They don’t have it at the regular grocery store I go to, Ingles. It’s in the vegetable section by the bags of salad there.  They have mild and hot. They also have chipotle flavored. I get mild. The ginger makes it hot enough for me.


This salad is the most delicious one I’ve had! And it’s so easy to make, it just takes a few minutes. This is my favorite salad recipe now. Plus I feel good when I eat it, because it’s low in fat.

This is a Low Calorie, delicious, healthy salad. It has grilled chicken and other healthy ingredients, so it is filling.
  • Fresh Kale (for at least half, I use more)
  • Lettuce
  • Pico Da Gallo
  • Grilled Chicken
  • Ginger
  • Tumeric
  • Light or No Calorie Dressing of your choice
  • Add almonds if you want and
  • Chia Seeds
  1. Just cut up the fresh kale and lettuce. I like it cut a bit small.
  2. Add Grilled Chicken
  3. And Pico Da Gallo - Homemade or bought
  4. For Ginger, use fresh, peeled or sprinkle on from a can. It's spicey hot, so use the amount you want to. (In the spice section)
  5. Then sprinkle on Tumeric
  6. Put on your dressing. (I use Lite Ceasar)
