PALEO CHOCOLATE CHUNK BANANA BREAD

  • 4 bananas (2½ cups mashed or 575 grams)
  • 4 eggs
  • ½ cup (140 grams) almond butter (or nut butter of choice)
  • 4 tablespoons coconut oil, melted
  • ½ cup (75 grams) coconut flour
  • ½ teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • pinch of sea salt
  • 6 oz. dark chocolate, chopped

PALEO CHOCOLATE CHIP BLONDIES

  • ½ cup almond butter
  • ¼ cup coconut oil, melted
  • ¾ cup coconut sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup almond flour
  • 1 teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 4 oz. dark chocolate chunks*
  • DIRECTIONS

  • ¾ cup coconut oil
  • ¾ cup cocoa powder
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla extract (optional)
  • ⅛ teaspoon salt (optional)

CARROT GINGER MUFFINS (gluten free, grain free, paleo)

  • 2 cups blanched almond flour
  • ½ teaspoon  celtic sea salt
  • 1 teaspoon baking soda
  • ½ tsp allspice
  • ½ tsp powdered ginger
  • a pinch of clove
  • ½ cup shredded coconut shreds , unsweetened
  • 3 eggs, preferably pastured
  • ½ cup coconut oil ,melted
  • ½ cup maple syrup OR honey
  • 1-2 Tbs grated fresh ginger
  • 1 cup grated carrot
  • 3/4 cup raisins, soaked in water for 15 minutes and drained
  • DIRECTIONS

PALEO ALMOND FLOUR MUFFINS–MASTER RECIPE (Gluten Free, Dairy Free)

  • 2-1/2 cups almond flour or almond meal
  • ¾ tsp baking soda
  • ½ tsp fine sea salt
  • 3 large eggs
  • ⅓ cup unsweetened pumpkin puree, thawed winter squash puree, butternut squash puree, unsweetened applesauce, or mashed very ripe banana
  • 2 tablespoons honey, agave nectar or maple syrup
  • 2 tablespoons coconut oil (melted) or vegetable oil
  • 1 teaspoon vinegar (white or cider)
  • Optional Flavorings: 1 teaspoon extract (e.g., vanilla, almond), citrus zest, dried herbs (e.g., basil, dill), or spice (e.g., cinnamon, cumin)
  • Optional Stir-Ins: 1 cup fresh fruit (e.g., blueberries, diced apple) or ½ cup dried fruit/cacao nibs/chopped nuts/seeds or
